There certainly is a kale-crazy these days. With an abundance of iron, antioxidants, fiber, calcium, vitamin A, D and K, it’s no surprise that this vegetable is at the top of the “super foods” list. With a resume like that it’s easy for us moms to see why kale needs to be a part of our weekly grocery list.
Unfortunately, most kids don’t see it that way, and no matter which way I spin the story, convincing my son Felix to eat his greens can be quite a chore. Usually I can creatively work spinach into his diet, but kale doesn’t even stand a chance. Kale can be a thick, tough green and taste a bit bitter. Typically kids aren’t too keen on the idea of a kale salad.
So lately I’ve been finding new unexpected ways to incorporate some greens into our diet. This is where smoothies come in. The genius-ness of a smoothie is anything, …kale, spinach, spiralina, can be disguised by adding something sweet like a banana or a handful of dates.
This green smoothie has a bit of a mint and chip feel to it. Not only does it satisfy a sweet tooth but is a secret superfood powerhouse, thanks to the kale, chia seeds and cacao nibs. It’s been a big hit at my home and perfect to drink anytime of the day. Let us know if it works for you…
INGREDIENTS FOR THE GREEN SMOOTHIE
1 cup of almond milk (see recipe here)
3 stalks of kale
handful of mint leaves
2 teaspoons of chia seeds
2 tablespoons of cacao nibs
additional vanilla bean (optional)
handful of ice
Throw ingredients into the blender on high. Doesn’t get easier than that right? Depending on taste you may need to add more mint/cacao nibs. I promise it tastes better than it looks
With something thick and hearty ingredients like kale it’s important to have a high speed blender that can break down the ingredients and provide a smooth texture. For that reason and several others, we have become big fans of the Vitamixer. It’s quite an investment but if you enjoy making smoothies and soups then it will be well used and appreciated.
